Ginger-Garlic Ground Chicken with Bok Choy & Rice

This flavorful meal combines tender bok choy, savory ground chicken, fresh ginger and garlic, and fluffy rice in a delicious sauce. Ingredients

For the Bok Choy & Chicken

  • 6 small bok choy
  • 1 pound ground chicken
  • 2 tablespoons vegetable oil
  • 2 tablespoons fresh ginger, finely julienned
  • 2 cloves garlic, minced
  • ¼ cup water
  • Cooked rice, for serving

For the Sauce

  • 3 teaspoons cornstarch
  • 1½ teaspoons light or all-purpose soy sauce
  • 1 teaspoon oyster sauce
  • 1 teaspoon toasted sesame oil
  • ¼ cup water
  • ¼ teaspoon salt
  • Pinch of white pepper

Instructions

1. Prepare the Bok Choy
Trim the base of the bok choy and separate the leaves. Leave the small, tender center intact. If the stems are large, cut them in half lengthwise. Rinse well and shake off excess water.

2. Make the Sauce
Whisk together the cornstarch, soy sauce, oyster sauce, sesame oil, salt, and white pepper. Once the cornstarch is dissolved, stir in the water.

3. Cook the Ground Chicken
Heat a large nonstick pan over medium-high heat. Add the ground chicken and cook, breaking it apart with a spoon, until fully cooked. Transfer the chicken to a plate and set aside.

4. Cook the Ginger & Garlic
Add the vegetable oil to the pan and reduce the heat to medium. Add the ginger and garlic and cook for about 1 minute, until fragrant and lightly golden.

5. Add the Bok Choy
Add the bok choy and toss for about 15 seconds, coating it in the ginger, garlic, and oil. Bok choy cooks quickly, so be careful not to overcook it. It should be tender while still having a little crunch.

6. Steam
Turn the heat up to medium and pour in the water. Cover and steam for about 45 seconds.

7. Add the Sauce & Chicken
Remove the lid and pour in the sauce. Add the cooked ground chicken and toss everything together for about 30 seconds, until the sauce becomes clear and thickens. If the sauce becomes too thick, add a small splash of water.

8. Serve
Spoon the ginger-garlic ground chicken and bok choy over warm cooked rice and enjoy!
