Ingredients:
- 4 Chicken Legs
- 1 bunch Bok Choy
- 2 Carrots, sliced
- ½ Onion, thick slices
- 2–3 cloves Garlic, chopped
- 1–2 Tbsp Oil (olive, vegetable, or your preferred kind)
- Salt, pepper, garlic salt (or your favorite seasoning)
- Optional: Teriyaki Sauce
- Optional: Steamed white rice, for serving
Tip: No teriyaki sauce on hand? Try mixing a bit of soy sauce, sugar or honey, and vinegar for a quick alternative.
Instructions:
- Blanch the Bok Choy: Bring a pot of water to a boil. Add the bok choy and cook for 1 minute. Drain and rinse with cold water to keep it crisp and bright. Set aside.
- Sauté the Garlic and Onion: In a large pan, heat oil over medium heat. Add garlic and onion and cook for 1–2 minutes, just until they soften and release their aroma.
- Brown the Chicken: Add the chicken to the pan and season with salt, pepper, and garlic salt. Cook for about 5 minutes or until the outside is lightly browned.
- Add the Vegetables: Stir in the sliced carrots and blanched bok choy (cut the stalks if you prefer smaller pieces). Cook together for a few more minutes.
- Optional Sauce: Add teriyaki sauce if using, and let everything simmer until the chicken is fully cooked and the flavors come together.
- Serve: Spoon over steamed white rice and enjoy.
