These tasty corn cakes are like popcorn in pancake form! Crispy on the outside and tender on the inside, they’re delicious on their own, served with scrambled eggs or tofu, topped with spicy black beans, or paired with a warm bowl of chili. Masa harina is currently one of the items that may be available at Redwood Empire Food Bank food distributions, though available foods vary by distribution and season.
Makes: 4 corn cakes
Prep Time: 5 minutes
Cook Time: 8 minutes
Total Time: 13 minutes
Ingredients
- 1 cup masa harina
- ½ teaspoon salt
- 1 cup dairy milk, non-dairy milk, or water
- ¼ cup fresh or frozen corn
- 2 teaspoons avocado oil or another high-heat cooking oil
Instructions
- In a medium mixing bowl, combine the masa harina and salt with a fork.
- Slowly pour in the milk (or water), stirring as you go. Fold in the corn and mix until a sticky dough forms, using your hands if needed.
- If the dough feels too sticky to handle, add 1 additional tablespoon of masa harina and mix until it reaches a workable consistency.
- Divide the dough into four equal portions. Roll each into a ball, then gently flatten into patties about ½ inch thick.
- Heat the avocado oil in a non-stick skillet over medium heat.
- Place the corn cakes in the skillet, working in batches if necessary. Cook for about 4 minutes without moving them, until golden brown.
- Flip and cook for another 4 minutes on the other side until browned and cooked through.
- Serve warm with a pat of butter (or non-dairy butter), a drizzle of maple syrup, or your favorite savory toppings.
Grilling Instructions
For a smoky flavor, cook the corn cakes on a lightly oiled cast-iron skillet placed on the grill. Heat the skillet first, then cook the corn cakes for about 4 minutes per side until golden brown and heated through.
